A common novelty dish that involves really any protein and heart vegetable base served with a specially fed Kasaaki which floats, tied above the fish, to be burst allowing its digested contents to drip over the plate’s contents.
Preparation
The Kasaaki are kept in a confined space usually outdoor surrounded by simple wire or woven caging. Specific plant life is cultivated to grow within the Kasaaki pen to create a specific flavor within the Kasaaki’s digestive fluids. It is also believed that specific animals can be included in the pen if it is large enough to further augment the flavor and aroma but this remains debated and uncertain.
